Foodie Friday: Treat yourself with these Mini Berry Bread and Butter Puddings. They might be small in size, but they’re definitely big on flavour. And because they’re so easy to prepare, you’ll be enjoying them before you know it. Go on, do it. You know you want to!

INGREDIENTS:

  • 400g brioche loaf
  • 40g butter, softened
  • 4 Australian Free Range Eggs, lightly whisked
  • 1/2 cup (125ml) milk
  • 1/3 cup (75g) caster sugar
  • 2/3 cup (100g) frozen mixed berries
  • Icing sugar, to serve
  • Vanilla ice cream, to serve

 

METHOD

Step 1
Cut brioche into 2cm-thick slices. Spread 1 side of each slice with butter. Cut each slice into 3cm pieces.

Step 2
Whisk the egg, milk and sugar in a large shallow dish until combined. Add brioche and berries. Set aside for 10 mins to soak.

Step 3
Preheat pie maker. Spoon 1/4 cup of the brioche mixture into each pie maker hole. Close the lid. Cook for 6 mins or until golden. Stand for 5 mins. Transfer to a plate. Repeat with the remaining brioche mixture to make 12 puddings.

Step 4
Dust puddings with icing sugar and serve with ice cream.
